In the last issue, Eros Food Creator Mayunam gave us a recipe using winter food ingredients. This time chef Mayunam will share with us a recipe using spring ingredients that will help boost the hormones to make you feel happy. Be sure to read Chef Mayunam's useful tips as well!

Which Ingredients are Good for Women's Health?

In this section, Mayunam tells us about the ingredients that are good for women's health, what they contain, and how they affect your body.

Canola

Nanohana or Canola

Canola (rapeseed plant, or "nanohana" in Japanese) is rich in vitamin C, which helps reduce stress. It is also high in calcium, and when eaten with tofu, it can prevent calcium deficiency and is great for building your body! It is also rich in dietary fiber, which promotes bowel movements and helps to balance female hormones, which can easily fluctuate. It is also rich in vitamin B2, a great antioxidant that enhances the immune system and protects the skin. Vitamin B2 also helps with skin irritation due to pollen and other factors. (As a substitute, Chinese broccoli is also rich in Vitamin C and calcium!)

Dried Sakura Shrimp

It is rich in astaxanthin, which has very strong antioxidant properties and is essential for anti-aging and beautiful skin. Aging and fatigue can also release unpleasant odors from the body. Actively consuming sakura shrimp can help to reduce the causes of odor from within the body. (Most shrimps do contain astaxanthin. It's the pink color you see in many seafoods.)

It is also said that sakura shrimp has the effect of warming up the body and increasing stamina. It is also recommended you eat it when you feel dizzy, lightheaded, or have cold hands and feet.

Chicken Breasts

Chicken breasts are an inexpensive, easy-to-find, low-fat and high-protein food. It is rich in various vitamins such as vitamins A and B. It is also high in niacin (a type of vitamin B), which is essential for relieving fatigue, protecting mucous membranes and the digestive system, as well as maintaining healthy capillaries. Niacin also helps create lustrous skin and hair, and improves blood flow.

 

Miso

Miso

Miso is made from soybeans, also known as the "meat of the field" in Japan. Soybeans contain soy isoflavones, which work similarly to female hormones, helping to build a feminine body and moisturize the skin.

Sesame

Sesame seeds are rich in zinc. A lack of zinc impairs protein and DNA synthesis. If we have in enough zinc in our diet, we can keep our skin, hair, nails, and other parts of our body beautiful. Since ground sesame oxidizes quickly, we recommend that you grind the sesame in a mortar and pestle just before using it for cooking. The taste and aroma will be even richer.

Cumin

Cumin promotes digestion and its aroma has a relaxing effect. It is perfect for when you feel tired, weak, or lethargic. It is also said to relieve tension and enhance a sense of peace.

Recipe 1: Chinese Spring Soup to Soothe the Soul

Chinese Spring Soup

Servings
2 to 3 servings

Ingredients
・1/2 onion
・1 small new potato
・150 g (5.5 oz) canola (can substitute broccoli or Chinese broccoli)
・150 g (5.5 oz) tofu
・500 ml (17 fl oz) water
・1 1/2 tablespoons Chinese soup stock powder
・A pinch of salt and pepper
・Dried sakura shrimp to garnish (a couple of regular cooked shrimps will do just fine!)
・1 tablespoon sesame oil

Method
①Cut all vegetables and tofu into 1.5 cm (approx. 1/2 inch) cubes.

②Heat sesame oil in a pan and fry onions and potatoes.
③Once the onions become translucent, add the canola and stir-fry lightly until everything is well-coated by the oil.
④Add water, tofu, and Chinese soup stock. Bring to a boil (5-10 minutes).
⑤Season with salt and pepper, and serve in a bowl. Garnish with sakura shrimp to finish!


Cooking tips
・Sautéing the ingredients prevents them from falling apart and locks in the flavor. The vegetables will also retain their texture.
・By adding sesame oil and shrimp, the aromas will stimulate your appetite.

 

Recipe 2: Spiced Miso-Grilled Chicken to Set the Mood

Spiced Miso-Grilled Chicken

Servings
2 to 3 servings

Ingredients
・3 chicken breast fillets
・A pinch of salt
・Chicken marinade
  1 tablespoon water
  1/2 tablespoon sake
  1/2 tablespoon sesame oil
・Miso Sauce
  1 tablespoon sake
  1 tablespoon miso paste
  1 tablespoon sugar
  1 tablespoon white sesame seeds
  1/2 teaspoon whole cumin seeds
  1/2 teaspoon cumin powder

Method
① Cut the 3 chicken breasts into thirds (1/3) each, sprinkle lightly with salt, mix with the chicken marinade and let stand for 10 minutes.

② Mix all ingredients for the miso sauce and heat in a microwave (600w) for 30 seconds.
③ Line the grill with aluminum foil and place the chicken onto the grill.
④ Grill for 3 minutes on medium to high heat, then turn over and grill for 3 more minutes.
⑤ Brush the chicken with miso sauce and grill over high heat for 2 more minutes, until miso is lightly browned.

Cooking tips
・ Be sure to prep the chicken in step ①, to make the finished dish tender and juicy.
・ Pair this with a side of rice or alcoholic beverages!
